Why AI

Why would a chef start an AI company?

I have not only been a chef. Alongside the kitchens and the sales roles, I have set up many e-commerce businesses over the years, so working with technology has always been part of how I operate. Moving into AI was a natural step. I had been following it closely in my spare time long before TwoBridges.ai existed.

I have spent my working life in operations that run on hard-won knowledge and too much paperwork. I know where the hours go, because I have lost them myself. TwoBridges.ai exists to put that time back, with tools built around how the business already runs rather than how a software company thinks it should.

Why hospitality

Why start with hospitality?

Because that is where I have earned the right to an opinion. Thirty-five years in the sector means I can walk into a kitchen and see the pinch points before anybody shows me a spreadsheet. Advice about AI is only as good as the understanding of the business it is aimed at.

The approach is to go deep in one sector, build something that works in the field, then carry the pattern to the next. Field service and trades came next, through TorquePlan.

The honest view

What do business owners get wrong about AI?

Most of the owners I meet sit at one of two extremes. Either they think AI will run the business for them, or they are wary of it and would rather not touch it at all. Both are understandable. Neither is where the value is.

The truth is usually smaller and more useful. Quoting, invoicing, chasing payment, rotas, stock counts, training notes. The repeated jobs that eat a manager's evening. That is where AI earns its keep first.

Often your staff are already using AI tools, whether you know it or not. Better to find out how and do it properly than pretend it is not happening.

No hard sell

Will you just sell me software?

No. I spent ten years in equipment sales and the lesson carries straight across: specify what suits the site and the budget available, not what the salesman wants to shift. If an existing tool you already pay for does the job, I will tell you. If nothing needs building, I will tell you that too.

How it works

What does working with you actually look like?

It starts with a free first conversation. How the business really runs, where the peaks are, where the time goes and what you want to get to.

Then we build around your workflow, your data and your team, not the other way round. When it is live I train the people who will use it. I stay on hand afterwards. The measure is hours handed back to the team, not another admin job for somebody to stay on top of.

Where

Where are you based? Do you come to site?

Near Newport, South Wales. The company is named for the two Severn crossings into the region. That is the ground I cover in person: South Wales and the South West, from Swansea to Bristol and Gloucester. For the right project I work UK-wide.

If you want an AI consultant who can be in the room rather than on a video call from the other end of the country, that is the point.
